Must Try Banana and Carrot Cake Hybrid

Like the rest of the world, we’ve had a ton of free time on our hands lately. Holed up inside, it’s been a perfect time to experiment with different dishes, cooking techniques and popular foodie trends. And nothing’s caught our eye quite like the craze of making homemade banana bread that’s been taking the world by storm. But we wanted to spice things up, to up the ante a little. Instead, we wondered, what if we created a hybrid fruit cake? A banana and carrot cake mix, if you will.

Look, banana bread on its own is delicious. It’s relatively simple to make, and is always a certified crowd pleaser. And carrot cake? Fuggedaboutit. We simply love to whip up these easy to bake delights. In fact, it almost takes longer to bake these treats than it does to completely devour them.

So that got us thinking: What would happen if we combined the two recipes? How would a banana and carrot cake combo bake, and most importantly, taste?

Luckily we had most of the ingredients that we planned on using lying around the kitchen. With a handful of bananas that were overly ripe, and a ton of excess carrots, it was time to do some trial and error baking.

We love to raid the pantry and see what kind of goodies we can sneak into our bakes, but we didn’t want to go too overboard this time either. And while we didn’t want to take away from the flavors of the bananas and carrots, a little chocolate never hurt. So we decided to add some chocolate chips, walnuts for a nice crunch, and coconut flakes.

Below, we’ll go over the ingredients used to make this delicious concoction. Organize the ingredients into 2 groups: Dry and wet ingredients. As the name implies, the wet ingredients have an element of water in them. While the dry ingredients, are well, dry.

Dry Ingredients

  • 2 cups flour (10 ounces)
  • 1 tsp baking soda
  • 1 tsp salt
  • ¾ tsp cinnamon
  • ½ tsp nutmeg (optional)
  • ½ tsp ginger powder (optional)
  • ½ cup brown sugar

Wet Ingredients

  • 3 mashed bananas (1 cup)
  • ⅓ cup coconut oil
  • ⅓ cup yogurt or milk
  • 2 eggs
  • ½ tsp vanilla
  • 1 cup shredded carrots

Additional Toppings

Feel free to add any other goodies or treats that are desired to the bake. We kept it relatively simple, but it’s hard to go wrong with toppings like raisins or dried fruit.

  • ⅓ cup walnuts
  • ⅓ cup chocolate chips
  • ⅓ cup coconut flakes

How to Make Banana and Carrot Cake

Now that the ingredients are gathered, the process for making this bake is pretty simple. Make sure to have a couple of large bowls at the ready, for mixing purposes.

  • Mix together dry ingredients in a large bowl and set aside.
  • Mix together wet ingredients in a large bowl.
  • Combine both the dry + wet ingredients together thoroughly.
  • Mix in additional toppings, but make sure to save some to sprinkle on the top of the bake as well.
  • Once everything is mixed, add it to a loaf tin.
  • Add additional toppings to the top of the loaf.
  • Set the oven to 350 degrees, and bake for 50-60 minutes.

And that’s it. That’s the whole process. A super simple bake that produces an incredibly delicious fruit loaf. The most difficult part of the whole process is simply waiting for the banana and carrot cake to be finished. The smell of the loaf while it bakes will have everyone in the house drooling.

Once cool, slice up the banana and carrot cake as you see fit. We loved the gooey chocolate chips melted within the loaf, and the crunchy walnuts paired perfectly with all the flavors.
